So I have been trying to eat healthier, and follow the mediterranean diet. Having multiple sclerosis and fibromyalgia eating better is my goal. Avoiding foods that could potentially trigger and worsen my symptoms. I have made a few things that are absolutely delicious and some that are complete failures. Most I like most my kids mainly my daughter refuses to eat. As I try and transition my house to a healthier lifestyle. I want to share them with y'all as well, hope you enjoy.
In a food grinder grind half the bag of spinach, one red bell pepper, and one onion.
Put ground turkey ground up spinach and red bell pepper in a bowl, add garlic salt, pepper, parsley and oregano. Add half of the almond flour mix all until well combined.
Add more almond flour if needed, roll up the mixture into meatballs. Place 4 in air fryer for 20 minutes flip and cook for additional 15 minutes. Continue until all meatballs are cooked.
Add orzo top with the veggie mix, put desired amount of meatballs top with tzatziki sauce
