How to Create an Unforgettable Turkey Meatball Orzo Veggie Dinner Plate

So I have been trying to eat healthier, and follow the mediterranean diet. Having multiple sclerosis and fibromyalgia eating better is my goal. Avoiding foods that could potentially trigger and worsen my symptoms. I have made a few things that are absolutely delicious and some that are complete failures. Most I like most my kids mainly my daughter refuses to eat. As I try and transition my house to a healthier lifestyle. I want to share them with y'all as well, hope you enjoy.

Ingredients
  • 48 oz Ground Turkey
  • 16 oz Almond Flour
  • 8 oz Spinach Bag
  • Bell Peppers, 3 Red, 2 Orange, 2 Yellow
  • 2 Onions
  • Garlic Salt, Pepper, Parsley, Oregano
  • 16 oz Orzo
  • 32 oz Chicken Broth
  • 2 Zucchini
  • 16 oz Tzatziki
Instructions
  1. In a food grinder grind half the bag of spinach, one red bell pepper, and one onion.

  2. Put ground turkey ground up spinach and red bell pepper in a bowl, add garlic salt, pepper, parsley and oregano. Add half of the almond flour mix all until well combined.

  3. Add more almond flour if needed, roll up the mixture into meatballs. Place 4 in air fryer for 20 minutes flip and cook for additional 15 minutes. Continue until all meatballs are cooked.

  4. Cook orzo per instructions with the chicken broth add garlic salt and pepper. Grind up remaining spinach once orzo is finished add orzo and mix well cover and set aside.
  5. Cut all bell peppers and zucchini season with garlic salt, pepper, oregano, and parsley top with olive oil mix well. Put half in air fryer for 20 minutes once done cook other half.
  6. For the tzatziki sauce you can either buy it from the store or make your own. To make it you'll need a cucumber, whole milk Greek yogurt, a lemon, olive oil, garlic, dill and mint.
  7. Grate half of the cucumber squeeze all water from grated cucumber in cheese cloth, add to a bowl add 1 cup of the yogurt, 1 tablespoon of lemon juice, 1/2 tablespoon of olive oil, 1 garlic clove grated, 1 tablespoon of dill and mint grated. Mint optional
  8. Mix well until well combined
  9. Time To Plate

    Add orzo top with the veggie mix, put desired amount of meatballs top with tzatziki sauce

Note

You can cook veggies and meatball in oven for faster time cook at 375% for 20 minutesĀ
