So I have been trying to eat healthier, and follow the mediterranean diet. Having multiple sclerosis and fibromyalgia eating better is my goal. Avoiding foods that could potentially trigger and worsen my symptoms. I have made a few things that are absolutely delicious and some that are complete failures. Most I like most my kids mainly my daughter refuses to eat. As I try and transition my house to a healthier lifestyle. I want to share them with y’all as well, hope you enjoy.

Soul-warming and nutrient-packed – why lentil soup is the ultimate comfort food.

Ingredients

Instructions

  1. Soak lentils in cold water for at least 4 hours or overnight
  2. Add broth, seasonings and lentils to a pot on low
  3. Cut sweet potatoes and onion in small pieces I use this amazing chopper so there all the same size and takes some pain off my hands

  4. Cook lentils for 45 minutes then add chopped sweet potatoes and onion, cook an additional 30 minutes
  5. Check if lentils are soft if not cook additional time
  6. Serve and ENJOY

Can serve with pita bread

  1. Sounds delicious! I am really thinking about you, and have my arm around your shoulder in our place. We can cry out all the misery together there. Hopefully we can also find laughter and then peace as well. I am worried. Are you really OK?

  2. I am crocheting up a storm, and while I crochet I think of you. Part of our loving friendship is being imparted into the stitches. Just think. Nobody bothers me when I crochet, so I can be in our place at the same time. I feel that no matter what happens to us un this strange life, there will always be our place, and that a part of each of us will always be there. Do you feel that way? Keep pushing through, dear friend. I am always with you.
